Yes, that works. However, take a look at the question and answer on a similar product: https://www.digitec.ch/de/s1/QuestionAndAnswer/kann-ich-bei-der-asus-rampage-v-extremeu31-mainboard-eine-corsair-vengeance-lpx-4x-4gb-ddr4-3200-dim-12144

Yes. However, you must be aware that only "virtual surround" is possible via Toslink, the quality of which depends heavily on the receiver connected. For "true" 7.1 and playback of uncompressed (lossless) audio sources, analogue or HDMI must be used.

I always recommend taking a look at the manual of the mainboard beforehand, there's a lot in there ;-) Regarding your question, M.2 M (where M.2 M also includes B, see SSDs) is supported for this mainboard. NVMe is important because the M.2 SSDs are controlled via PCIe (NVMe means that you don't need extra drivers, AHCI only concerns SATA interfaces). If you have NVMe, you can easily set it up as a C: drive. e.g. Samsung 950 Pro (256GB, M.2 2280) I own it myself and it works without any problems so far.

S-ATA Express SSDs can be connected to an S-ATA Express port. However, these are not widely available and we do not carry them in our range. However, if there is interest, we would be happy to take some. However, they are much more expensive than M.2 SSDs. For the X99 boards, I recommend an M.2 SSD such as the Samsung SM951. Unfortunately, there is no information about the Asus Hyper Express SSD, if and when it will be available.
