Is it possible to record in 8K with a fast enough UHS-II (not 8K Raw but e.g. 8K All-I)? If it is not possible, what would be the maximum possible?

No is not possible.
For 8K recordings with a UHS-II, a maximum of IPB is possible (tried with a SanDisk Extreme Pro 300MB/s).
Anything higher is only possible with a CFexpress card.
