On macOS 10.15 I can scan locally. It works via the system settings as well as via HP Easy Scan. Maybe uninstall the HP software completely and reinstall it? Or dial the scanner from a non-HP program?
The printer is flat at the bottom and has no feet, so this should not be a problem.
The front part may also protrude over the footprint without any problem, as there is enough weight on the whole surface at the back.

The two are almost identical except for a few specific points. Depending on which options you need to work, the surcharge should be justified.
First switch to the system print dialogue of OS X and then there is a checkbox for black/white or select under presets. This could be related to the driver used.

I am looking for an MFP to replace my tried and tested HP Officejet Pro 8600 Plus. The MFP must certainly have duplex printing and duplex scanning and be able to be operated via Mac OS. I am unsure whether the HP OfficeJet Pro 8730, which has been on the market since 2016, could be a good buy. The alleged compulsory registration with HP bothers me a little. Or how long will the device still be supported in terms of software and drivers?
As an alternative, I can see the Epson Ecotank ET-5800, which is significantly more expensive, but in my opinion also offers a lot. What do you think, which MFP should I buy?

Malicious tongues claim that the *fixed Eco-Tank print head* never reaches the 5 refill, which is enough for about 10'000 pages each. )) -> I'd rather buy a 250.- HP 8730 + 200.- for the conversion!
