Hello Waschu, yes, you can. You can even scan several pages at once using the top feeder (but double-sided scanning is not supported). I use the free software HP Scan and Capture (Windows) to scan/create PDFs as well as images.

Yes, this is possible, but there should already be a WLAN into which the printer can be integrated (router). The simplest variant would be to connect the printer to the router via LAN cable. Then you simply continue to use the router's WLAN. Wifi-Direct is a different function and can only(!) be used for printing by sending PDF or JPG files to the printer (as far as I know).
Hi, for printing no problem. Scanning though I struggled with. The special scanning app refused to work on my Mac, the HP Smart was ok.

If both devices are on the same WLAN, it works. I have never tried it any other way - so I can only answer your first question (= yes). By the way, I don't even need the HP eprint app - my phone recognises the printer on the network directly from the PDF reader.
The producer says that this printer should work fine with any mac os device that has the Sierra OS or a later version. It should work fine with your macOS Catalina.
