If the colour toners are empty, but I only want to print black and white documents, is that still possible? Or do I have to - unnecessarily and outrageously - refill all the colours first?

Normally not. However, an error is then active the whole time, which you may have to acknowledge each time you print.

Yes, apparently all colours have to be full to print B/W.
For a while you can acknowledge the "low toner" warning, but as soon as the colours are at 0%, the printer becomes completely useless...
