I would try to shut down the console completely (not just standby) and then restart it after some time (2 minutes). You can only do this in handheld mode by holding down the On/Off button for a long time. If that doesn't help, put it back in the dock and remove it again after a few minutes to restart the display switch. Unfortunately, I couldn't find a reset button to physically disconnect the battery. (Only guesses, I haven't had the problem myself yet).
We don't have the same holder, but similar ones like these two, for example: Rammount RAM Universal Tablet Holder (large) xMount xMount@Desk Secure for iPad mini1/2/3 Ret We cannot guarantee whether these are compatible with the Switch.
For short sessions you can play with the existing two Joy-Con's, for longer sessions I would buy a Pro-Controller because it is more comfortable. However, wait a bit until it is clear which controllers are compatible, then you might save some money :)
No, it's not necessary. You can play well in a group with one console, but you can also play with several, which means that (thanks to the additional screens) you have more features available than on just one TV or Switch.
