The G1 should work with the ps4 pro as far as I know and as long as it's a 4 pin 3.5mm Y jack it will work. E.G : StarTech 3.5mm jack audio Y-cable - 4 pin to 3 pin headset splitter

Should it also fix my problem with my HyperX Cloud 2 microphone being too quiet. I'm currently using the HyperX sound card that came with it, which levels the microphone down.

Yes, it also amplifies your microphone. It's top, I have it myself.

How can you output 7.1 audio to an AV receiver with this unit?is it a mini-optical connection?is there another product that outputs multiple audio tracks digitally to a receiver?

Does this product work with Nvidia Shield? Do I need software to make this USB sound card work or is software only needed to improve it?

No, this is a Windows device, which means it also needs the corresponding drivers. Android can't do anything with it. Under Windows, there is software for config and firmware updates.
