It always depends on the ingredients. 1.5 kg is easy for a plait dough. Tip: Take the butter out of the fridge 30 minutes beforehand, so the shoots live much longer.

Loosening, only works in one position of the dough hook. I always press the small disc down slightly, as described in the introduction, but if it doesn't work, I turn the dough hook a little. In practice, this means that you have to try several times with the dough hooks in different positions until you find the right one. Between the "attempts" you should not turn the dough hook much, otherwise you "miss" the right spot and have the feeling that it doesn't work at all. So press patiently and turn little.
