Well, the idea behind it is that you already have an adapter from the iPhone. After all, the USB-C to Lightning cable is included! 18 W is enough, less will do. The case for the AirPods 2 uses no more than 5 W. It's probably the same with your Pros.
I switched and sometimes had the same problem. I find the Pro's much more comfortable to wear than the V1/V2... But it is always difficult to answer such questions because not every ear is the same...

MWP22AM/A comes with a 2nd generation magsafe airpods pro charger. Released early 2021.
The airpods pro earbuds themselves have not changed.
Between those two the MLWK3AM/A would be technically newer. There doesn't appear to be obvious differences other than serial number, model number and possible internal redesigns.
So this does not work for me via the internal settings. The different modes also work without a device, so the unpaired AirPods can already operate noise-cancelling. So this certainly doesn't work either. The different types of number presses can be changed at will via a suitable app. However, usually only in combination. For example, you can overwrite or combine play/pause with any command. However, the AirPods always remain in sync. A long press switches to another mode. Short (multiple) presses trigger a command.
