Can the AirPod pro be paired with a Garmin Fenix 6s pro and can music playback be controlled on the AirPods.

Yes, Apple writes about this: AirPods Pro can be used as Bluetooth headphones with non-Apple devices. However, the functionality is limited.

It remains to be seen how exactly the music control will be usable under Android, but it should be possible again with apps such as "Podroid".
