What is HDMI with Ethernet? Is it enough if my TV is connected to the Internet? Is the internet then passed on to the PS5 via the HDMI cable, for example?

Yes, that is sufficient. If the term "Ethernet" is written behind the product name, you can also transmit a network connection via the HDMI cable. This means that the HDMI cable can replace an additional Ethernet cable.
