Has anyone been able to get this Scan2Mail function to work on the printer, e.g. with office365?

In the browser, go to the printer menu via the network address and click on the "Scan" tab there and then "Set up scanning to e-mail" - works perfectly

With the setting for "Standard SMTP configuration", this has worked for me for years without any problems. I use the UPC server "smtp.hispeed.ch". The easiest way to configure it is in the web interface of the printer.
