Yes, this works. Connect the Xbox to the converter with an S/PDIF cable. Then plug the headphones into the 3.5 mm line-out of the converter.

You can adjust the volume in the xbox settings I play with a pair of bose headphones with a 3.5 mm plug directly on the controller.
