Is it possible to transmit the audio signal from the Mac mini M4 Pro to a Sonos Ray via its HDMI port? or is there another solution apart from Airplay?

Unfortunately not, the adapter only works in one direction (Optical -> HDMI). You probably need the Sonos Beam, which has an HDMI e-Arc connection.
