Is it possible to listen to the sound via the SONOS Playbase and the sound of the film, game etc. via the headphones at the same time?

You can only listen to the sound where the connection (jack or digital optical) is also connected. If a device (e.g. TV) is connected to Sonos and at the same time to the headphones, you can hear the sound from both devices if the device (e.g. TV) allows it.
