Hi everyone, this is the second time I've tried to make pens and it all sticks to the outflow and in the mould. Can I trust the integrated scale ? Especially the liquid quantity indicated in the display? I used De Cecco 'Semola di grano duro rimacinata' flour. I've been told that this is excellent for pasta, but I've failed twice and I'm demotivated. What flour do you use? Thank you in advance for your support

Hello
I would recommend that you make the dough according to the machine's instructions. When I followed the recipe from the flour manufacturer, I often had poor results. There are various dough recipes in the machine manual.
I hope I have been able to help you with this. I think the pasta flour from the wholesaler with the orange M is very good, but that's a matter of taste.

You need less flour and less liquid with the machine than with traditional hand-made pasta. According to the quantities indicated by the machine.

I also use a mixture of ordinary white flour and durum wheat semolina.

And if I'm making large quantities, I replace a small amount of liquid with a spoonful of olive oil.
