Can the mouse also be used for Windows clients and vice versa ("normal" variant with MAC)?

The Mac version doesn't come with the Unifying adaptor, there are some shortcuts that are preconfigured for Macs, those are the only differences, the mouse works with Windows via Bluetooth, a unifying adaptor could be bought separately if needed.
