Are the 8 bit colour depth bad, or should I rather buy one with 28 bit, but without G-Sync?

The 8 bits are per channel. So that's 24 bits. More bits = more colours. Only you can judge whether you need G-Sync or not. It is best to research the whole thing once via Google.
