So yes, it should be compatible, obviously with older models. Newer models have SSD drives, but on older models you can change to a 2.5" hard drive, which should be compatible and the size should match.
Yes it would fit the Macbook Pro 2011, although I would highly recommend to install an SSD instead, because the SSD would be much faster. The cheapest 2TB SSD would be 177 CHF: Crucial BX500 (2000GB, 2.5") If you are ok with 1TB, it would cost about 100 CHF: Crucial BX500 (1000GB, 2.5")

No. Your laptop does not support an HDD, neither in desktop nor in laptop format. There is only one m.2 interface for an SSD, but it is already occupied and can therefore only be replaced. There is no room for an additional hard disk.
