Can be done. I didn't like the joystick of this model (too loose), so I took my old joystick and only used the throttle. It worked well, but it also depends a bit on the game. Certain titles don't like multiple joysticks and there are strange misimpressions, etc.

Both are connected to the PC / laptop via a common USB A port. If the MacBook Pro 2021 does not have its own (normal) USB A port, it would certainly also be possible via an adapter. As a flight sim, I would choose MS Flight Sim 2020 or (if a lot of time is to be invested) DCS World.

It should work. It's just a single USB plug, the classic way - if there's a driver, it will work.
