Yes, they work on the PS5. But the microphone cannot be muted.
Unfortunately, I don't know. I used the adapter because my docking station doesn't have USB-C. I connected a Jabra Evolve2 65 headset with a Jabra Link 380. I have connected a Jabra Evolve2 65 headset with a Jabra Link 380 and everything works the same as if the Link 380 was in the docking station without the adapter.

The adapter has USB-C, but that doesn't help with the PS4.
The headset only has a 4-pin jack plug. Normal for headphones would be 3-pin.
The PS4 DUALSHOCK 4 controller has a stereo headset (!) connection, not just a stereo headphone.
