I have never tested this. Since an action camera is primarily intended for video recording, it could be that the mode automatically reverts to video after switching off and on. Regarding settings for photos, have a look at the operating instructions (p. 19): https://de.gopro.com/content/dam/help/hero5-session/manuals/HERO5Session_UM_DE_REVD_WEB.pdf

The HERO5 has unique high performance video modes: 4K30/24, 4K24 SuperView, 2.7K48/50, 2.7K30 SuperView, 2.7K 4:3, 1440p80, 1080p120/90, 960p120 and 720p120. When using these modes, it is normal for the camera to become warm and require more battery power. When using these high performance modes in warmer ambient temperatures, the recording time of the camera may be reduced. In addition to the lack of air circulation, using the GoPro App can increase camera temperature and battery consumption, resulting in a reduction in recording time. If the camera becomes too hot, a message will be displayed on the screen indicating that the camera will be turned off. The camera will stop recording, save the video, disconnect from the GoPro Capture App and turn off. In this case, we recommend that you do not use the camera until it has cooled down. To operate the camera remotely at higher temperatures, the GoPro Remote should be used instead of the GoPro Capture App.

No, it's not possible either. The session itself generates a WiFi signal that you can connect to via your mobile phone. As far as I know, it is not possible to connect to home WiFi with it. But it would be cool... live streaming ^^
