Regarding trails: the standard Garmin map is not suitable for trails. The Swisstopo map, on the other hand, is great (but not cheap) or otherwise use opensource maps. Regarding water/falls: I would protect with the compatible silicone cover, then no problem (at least for me).

I don't have a Tacx, but there are several messages in the Garmin forum that the Edge 1000 works with the Tacx Smart T2180. In the configuration of the Garmin 1000 there is also an extra section "Indoor training". It is best to read this yourself in the Garmin Forum. In any case, the Tacx needs an ANT+ interface.
