So if you have a headset on or the volume of the speakers is pleasantly high, you don't hear the fans. It's just a background hum. I would describe them as rather quiet, but some people are probably more sensitive than I am.

No, there is no button to switch off. On the 3rd picture it may look like this, but this is the locking device to position or release the fans on the grid. There is a rotary control, but even at the minimum setting the fans rotate at 950 rpm according to the product data sheet.
It's very quiet, but on my power laptop the internal fan still kicked in, so it didn't do much for me.
