What kind of resolution and refresh rate can be achieved with a GTX 1080 Ti? I am currently working with 3x 24" Samsungs which will soon be 10 years old. Do the 5k with 120Hz work with regular DisplayPort or do I need the RTX cards for that? I might get a 3080 Ti later on.

GTX1080Ti normally have DP 1.4, so it should work. I'm not sure if 240 Hz also works (DP 1.4 vs. 1.4a). But if you don't want to gamble and 120 Hz is enough for you, I would recommend buying the predecessor. It is very similar and costs "only" around CHF 1,000.

LinusTechTips published a short test video for the G9 yesterday, in which they also discussed DSC. DSC is only supported from the RTX2000 series onwards, or with all AMD GPUs from 2019. This means that your GTX 1080 Ti will be able to display the full resolution with a maximum of 120 FPS at 8-bit colour. So if you don't plan to upgrade the GPU soon, the (significantly cheaper) predecessor of the G9 is probably better suited for you.
