I've read that some graphics cards have a 16-pin PCIe (which I didn't know before) power connector, is that true, or is it rather 2x 8-pin PCIe power connectors?

you always get an adapter from 2x8 to 16 with such GPUs, alternatively you can also buy a 12V highpiwer connector, which fulfils the same purpose
It is not 2x8 pin, but you need the flat combi plug 16bit 12VHPWR
