Is the gimbal compatible with large smartphones (in my case Pixel 8 Pro)? Thank you

I assume that this should work. It may be that the larger the smartphone, the more power the motors consume. Depending on this, you may have to remove the smartphone case if the phone is too wide.

With my Iphone 16 pro Max it works very well in your case I can't really help you I don't have Android sorry
