Well, you simply get a huge monitor wall, I personally would choose a 32 inch monitor with a 4K UHD 3840x2160 pixel resolution, because this configuration is much less wide and you still have a very good resolution. With a 27-inch monitor, 2560x1440 pixels is fine, but you won't get small fonts razor-sharp.
Two screens always have several disadvantages: you need several cables, you have to adjust the brightness and colour on both, which is relatively cumbersome, and then the power consumption is also much higher, as is the price.
My suggestion would be this model, it is very well equipped and also offers 144Hz, but with a very sharp 4K UHD resolution and HDMI 2.1 connections:
