Is it possible to run the headphones without the Nac switched on? If so, the sound will still be the same without noise cancellation or ?

Yes, you can, as long as it is operated via the supplied cable. In this case, however, all other audio functions are missing, including the amplifier function. This means that the sound is very dependent on the playback device! It has a relatively high impedance when switched off, which not all MP3 players with a good volume can manage.
However, I have been using it for weeks with the Sony NW-A25HN via Bluetooth. AptX works perfectly and the battery performance of the Sennheiser is brilliant, not to mention the Sony MP3 player.
