Is it possible to name devices (laptop, phone) connected via Bluetooth so that they are not all announced as "Mobile" when they connect?

Unfortunately, no. The other announcement that still exists is something like "PC connected" when you connect via the USB dongle. The announcement only distinguishes between dongle and Bluetooth.
