I would use the headset in different environments, Skype, but also zoom and others, what functionality do I have with the UC model in a Skype call?

The Teams model also has a special Teams button with which you can accept Teams meetings. And this, of course, includes a Teams certification. Always use the dongle supplied for the PC or notebook, as the integrated Bluetooth chips in notebooks are weaker and these certifications only apply in conjunction with the USB dongle. When buying, also make sure that the correct USB dongle is included, because Poly headsets are available with both the USB-C dongle and the USB-A dongle.

I usually use the Jabra Evolve 75 UC Duo for MS Teams meetings and paired with my mobile phone. I use the call answer/end and volume functions and of course mute/unmute by flipping the microphone up/down.
