I have an S8 with English (UK) language and German keyboard. Is it not possible to set the keyboard as follows? Settings app -> General Management -> Language and Input -> (On-screen keyboard) / Physical keyboard. However, I don't have a Dex and don't know how to use it. I prefer to work with my laptop than with the S8. Apart from the more powerful hardware, I also find the Android too cumbersome for more demanding applications.

I change the language with Shift + Spacebar. Hope this helps
