I have two Thunderbolt 2 outputs on a 2015 MacBook Pro. Can I connect an adapter to each of the outputs and connect 2 displays to HDMI? And thus have an extended desktop with these 2 displays?

Yes, you can connect both your displays via Thunderbolt 2 sockets with these adapters.
