I disassembled the grinder new and out of interest before using it for the first time. I tested it after reassembling it:
1. is it normal that it starts to grind noticeably at level 5 (without beans) and level 0 is very harsh?
2. how do you know how far the nut has to be "screwed in"? I can turn it up to click 0, just about. Is that correct?

Had the same question at the beginning.

It's best to take a quick look at this video:

From about 01:10 you can see how to reinsert the grinder correctly. If you don't get to level 0 when screwing it in, simply unscrew it again, turn the intermediate plate with the numbers 180 degrees and then refit it. You should then get to 0 (the grinder scrapes at level 0, so do not grind at this level to avoid damaging the grinder).
