I believe you can create a 4.0 surround system with the Amp with 2 passive speakers and 2 Sonos One SL, correct? Can you then add a subwoofer to the subwoofer out to have a 5.0?

Adding a subwoofer is possible, but then it would be a 4.1 system. 4 speakers, 1 woofer.
