I am spoilt for choice: I5 6600K or I7 6700K. System is with a GTX 1080, 16GB Ram etc. Price limit is around 2000.- Is the I5 enough?

Honestly, if you're going to spend money on a 1080, you should also get a 6700k. There are benchmarks on the net that are supposed to show that the i5's can't quite cope with the new Pascal GPUs (1070 / 1080), or that the CPU is probably limited in certain scenarios.
