I am planning to buy two Dell P2319H monitors for my home office (to expand, not mirror) and depending on who is working, connect my Lenovo E590 or HP Pavilion x360 convertible via docking station. Will this work with the Club 3D Dock?

It doesn't matter what kind of laptops/PCs you connect. Install the DisplayLink driver and your Windows will see the monitors. It is your operating system that remembers how you have arranged which monitors etc... the docking station remembers nothing.
