How safe is a water cooling system from leaking? And do you notice a big difference compared to a normal Cpu cooler?

There is no such thing as 100% certainty. The EK Predator 360, which is actually a manufacturer that stands for quality, had a defect twice. The first had a problem with the pump and had a leak at this point, the replacement delivery from EK six months later had a leak in the area of the radiator connections.

I haven't had any problems with the AiO watercoolers from Corsair so far. This model here has, as far as I know, a different OEM manufacturer, so this AiO first has to prove itself. In the last few weeks, however, I have not noticed any problems.

I've had a Corsair H115i RGB Platinium for 6 years. Yesterday during a thermal paste change, I noticed water marks on a pipe as well as on my M.2 SSD and graphics card.

At most, you have a problem if you buy a bad brand. Corsair stands for quality. I have installed one myself and the cooling works perfectly. Such closed WaKü systems cool better. In my opinion, however, they are only worthwhile for overclocking. Standard clock CPUs are best cooled with a chunk or similar.
