How does warranty and quality assurance work with second hand phones? I want to get the Note 20 Snapdragon version (only second hand is available) but if the battery degrades faster than expected, or the condition is worse than described, I don't want to be stuck with this lesser than expected product.

If you buy a used product, then you could make use of the remaining warranty period. So if a product was bought one year ago and has two in total. You will have one year of warranty left. Important is, that you keep the recipe and show it when you bring the device in a Digitec store.
