How does the P.I.D. differ from the normal Carola?

PID stands for: proportional - integral - derivative! PID control is almost obligatory for high-end coffee machine levels, why is that? The aim of this PID control is to generate and maintain a constant brewing temperature that works independently of the volume of the boiler.
