...how do you connect three monitors with 165 Hz to this graphics card? Two via DisplayPort and the third? Is there an adapter?

The 3rd port is HDMI, and as I understand it, there is the restriction to 60Hz. From my point of view, this card is (unfortunately) not suitable for a tripe screen setup with 165Hz (I have to say as a card holder ;-)).
