I received this mouse with the LOGI Bolt receiver, but it doesn't work with my new Mac Book Pro (Apple M3 pro) because it doesn't have such a connector:-(. What intermediate adapter do I need to buy? The giant part from Logitech for USB A with the other side USB C?

The adapter would be one option. But the mouse can also be easily connected to the Mac Book Pro via Bluetooth.
