Hello, the various versions of this model mention differences such as MS, US, USB-A, USB-C, Docking or not. My question is about the difference between USB-A and USB-C, does this refer to the BT dongle or the charging cable?

The dongle and the charging cable are USB-C or USB-A, depending on the version.
However, the connection to the headset itself is the old micro USB in both cases.

So if your PC has USB-C, choose the USB-C version. The headset itself is identical, regardless of the version.
