Hello, maybe someone can help me. I want to put a different launcher on it. What do I have to do? Instructions? Since my English is not very good I stumble on the internet. MIUI 10 takes some getting used to.

Why don't you just set the phone to German? It's 100% possible, take a look at the languages...
2. you install the launcher like any other Android phone on the market: open the Play Store, download+install the launcher, open the launcher and set it as the default launcher...
