Headphones switch on when a phone call is received, even though they are switched off (and remain switched on). Can this be changed somewhere?

Unfortunately, we are not yet aware of such a problem, but you can try to set it in the app. It would be the Edifier Connect app, where you can also set the shutdown timer.
