Question about CFH Pz 5000
Has anyone used the device for caramelising after the sous-vide bath and can recommend it?
Yes. Doesn't work as well as I had hoped. It is difficult to control/distribute the heat. I wanted a "SearZall" but gave up because I couldn't find the correct size gas canisters or adapters (US/EU/CH).
I have since switched to a cast iron pan. Makes a lot more mess and smoke, but the result is better.
