Answer

In the settings, you set separate preferred SIMs for voice and Internet and you can always change them again. When you start an app, it will use this SIM. It is possible that in the case of a service (e.g. email with push) where a network server has saved the previous connection, that the other SIM can still be used.
In general, I am amazed at how well this Dual SIM works.  You can also run two instances of the same app, e.g. two Whatsapp apps. I haven't managed to sync each with Google Drive though. But that's before a Whatsapp ban, not because of the phone.
