Does it matter if I use the Apple MagSafe 2 power adapter (60W) or the Apple MagSafe 2 power adapter (85W)?

It depends on what you want to charge. Basically, the larger devices have a larger battery, which therefore requires more power to charge. If you use the smaller charger, it will simply take longer.
