Can it be that 2 sets that are about 1m apart interfere with each other? e.g. delayed 'typing', mouse jerks, etc. ????

Yes, both radios are on the same frequency (2.4Ghz) and it is possible that the signals mix. I recommend that you pair one set again so that it selects a new radio frequency (https://support.logitech.com/en_us...). Then one set should select a different frequency than the other and thus interfere less with each other.
