Can I use it to connect MacBook Pro and Eizo FlexScanS2410W (native 1920 x 1200)? Are the missing pixels interpolated or is there a black border at the top and bottom?

I honestly don't know - but if in doubt, you could also buy a (mini) display port to USB-C adapter. This is my solution with a MacBook Pro 2016 and a 4K monitor. Take a look at what other connection options are available on your monitor and then choose a suitable adapter.

Mmmh - "missing pixels": What do you mean by that exactly? What kind of MacBook Pro do you have?
